Healthy Recipe Resource: Mashed Cauliflower

This meal makes for a perfect side for healthy holiday meals!
This recipe is provided by the dietitians at Ascension St. Vincent’s Ministry in Birmingham, Alabama.
Makes 4 servings
1 lb. chopped fresh cauliflower florets (about 5-½ cups)
2 cloves garlic, smashed
2/3 cup fat-free, lower-sodium chicken broth
1/2 teaspoon kosher salt
3 tablespoons nonfat plain Greek yogurt
2 teaspoons butter
Black pepper to taste (optional)
- Combine cauliflower, garlic, broth, and salt in a saucepan; bring to a simmer. Cook
- Transfer mixture to a food processor. Cover and process until blended. Add yogurt and butter; cover and process until smooth. Add pepper to taste.
- Serve and enjoy!
